Description:
Hungarian Mutton Goulash - la Shepherd: Take a Hungarian landscape, possibly the lowland plain with grazing sheep. Choose from the herd a young sheep, slaughter and skin it. Dice the meat. Rub the inside of the hanging pot well with pork fat. First, put the roughly-chopped foot bones, second, the sinewy meat pieces, then the onions cut in rings, salt, pepper, and caraway seeds into the pot. The choice loin meat should be added in as the second layer. Pour in a little water. Lay a fire of acacia wood under the pot and cook the meat through. Finally, sprinkle hot paprika powder into the cooked goulash, stir, and leave 5 minutes to simmer. Enjoy! (A.L.)
